Ingredients
8 slices day-old white sandwich bread
olive oil cooking spray
2 teaspoons olive oil
1/2 small red onion, finely chopped
500g boneless white fish fillets (such as perch, ling or
blue-eye), cut into 1cm cubes
1/2 small lemon, juiced
1/3 cup light thickened cream
2 tablespoons finely chopped chives
Method
Preheat oven to 180°C. Trim crusts from bread. Using a
rolling pin, roll out each slice until 5mm thick. Spray both
sides with oil.
Press each slice of bread into a 1/3-cup capacity muffin
hole. Bake for 15 to 20 minutes or until edges are golden
and crisp.
Meanwhile, heat oil in a non-stick frying pan over medium
heat. Add onion and cook for 3 minutes or until soft. Add
fish and cook for 2 minutes. Add lemon juice, cream and salt
and pepper. Simmer, uncovered, stirring, for 3 minutes or
until sauce thickens slightly and fish is just cooked
through. Spoon fish mixture into bread cases. Sprinkle with
chives and serve.
