Kid Friendly Recipes - Ham and pea fritters

Preparation Time 10 minutes

Cooking Time 25 minutes

Makes 12

Ingredients

200g (1 1/4 cups) fresh peas
100g (1 cup) diced leg ham
1/2 red onion, thinly sliced
1/2 quantity basic fritter batter (see related recipe)
1 1/2 tbs olive oil

Method

Cook peas in a medium saucepan of salted boiling water for 5 minutes or until bright green and tender (see microwave tip). Drain. Refresh under cold running water.

Kid's task: Add ham, onion and half the peas to the fritter batter. Use a fork to mash the remaining peas in a small bowl and add to the batter. Stir until just combined.

Heat 2 tsp of oil in a large frying pan over medium-high heat. Spoon 2 tbs of the fritter batter into the pan. Repeat to make 3 more fritters, spaced about 5cm apart. Cook for 3 minutes or until golden underneath and bubbles appear on the surface. Turn and cook for a further 3 minutes or until cooked through. Transfer to a warm plate and cover with foil to keep warm. Repeat with remaining batter and oil in 2 more batches to make 12 fritters.

Notes & tips

You can make these fritters 15 minutes before serving.
You will need 500g fresh peas for this recipe.
Diced ham is available from most supermarkets.
Microwave tip: Wash the peas and place in a freezer bag, adjusting until they are 2-3 deep when the bag is laid flat. Twist opening to close. Cook on High/800watts/100% for 1 1/2-2 minutes or until bright green and tender.
