Kids Party Food - Froggie in a pond

Ingredients (serves 4)

2 cups clear apple juice
85g packet lime-flavoured jelly crystals
4 chocolate frogs

Method

Bring 1 cup apple juice to the boil in a small saucepan over medium heat. Place jelly crystals in a large, heatproof bowl. Pour over boiling apple juice. Whisk until crystals have dissolved. Stir in remaining apple juice. Refrigerate 30 minutes.

Pour cold jelly into four 1/2-cup capacity jelly moulds or ramekins (see note). Cover. Refrigerate for 3 hours or until set. Press 1 chocolate frog into each jelly. Serve.

Notes & tips

Removing jellies from moulds (ceramic moulds in particular) can be difficult, especially those with a great deal of detail. Plastic is almost foolproof, especially those with a suction release at the base and plastic lid - great for individual serves and school lunch boxes.
